- Get sauce
- Use avocado
- Prepare roasted red pepper hummus
- Use eggplant
- You need eggplant
- Take mozzarella
- Use red pepper
- Take basil

Instructions to make Red Pepper Eggplant:
- preheat oven to 380
- scoop out avocado and smash or blend until soft
- combine avocado with hummus
- slice eggplant into four sections
- sprinkle basil on each section and brown on both sides in frying pan
- add chopped up red peppers to frying pan. add half of the olive oil.
- next, place eggplant and peppers into glass baking dish
- place sliced mozzarella on the eggplant and top with the sauce.
