- Mix dry ingredients in large bowl.
- Mix liquid ingredients in separate container, making sure eggs are well mixed in.
- Add liquid to dry and mix just until most of the dry lumps are gone, (a few pea sized lumps are OK.)
- For 3 - 4 inch cakes add 2 Tbsp of batter per cake to your griddle or pan.
- Cook until you see lots of bubbles popping through.
- Carefully flip cakes over, and cook about 20 to 30 seconds more. Time will vary according to what heat level is. If you find the middle is not fully cooked, when the outside is golden brown then you may need to adjust the heat to a bit cooler.
- Check the cakes for done by lifting one enough that you can see under it, it should be done when golden brown.
