- Prepare 400 gms chicken wings
- Take 1/4 cup chicken stock

- Marinate chicken with 1 tbsp soya sauce,little salt and vinegar for an hour.Meanwhile slice onion,carrot and green bell pepper.Sprinkle cornflour over the marinated chicken and mix well.
- Heat oil and stir fry chicken in batches. Set aside and sprinkle garlic and ginger.Stir till light brown and add sliced onion,carrot and capsicum.Sprinkle salt and stir fry.Add chicken and season with salt,black pepper, and fry till chicken is nearly done.
- Toss chicken with stir fried vegetables. Make a slurry of 1 tsp cornflour and chicken stock or water.Add soya sauce,red chilli sauce,hot and sweet tomato sauce and a pinch of monosodium glutamate.Add 1 drop orange red food colour.Mix all and pour this slurry over chicken and toss till it coats chicken.Add roasted peanuts and fried red chillies.Adjust salt as soya sauce is high in sodium content.Serve with chowmein or chinese fried rice.
