- Get 100 gms crackers
- Provide 100 gms butter
- Get 1 tbs red plum jam

- Crush the biscuits with a rolling pin and put in a bowl
- Add the melted butter and mix
- In a cake ring with a base place the crackers and butter at the base and flatten, place in the fridge to set
- Attach the genoise sponge disk to the crackers base with the jam
- Dissolve the gelatin in the water
- Pass the cheese through a seive to make it fine then add the icing sugar
- Mix the dissolved gelatin with the Yoghurt then pour it in the cream cheese mix well and add the lemon zest and the vanilla
- Lastly fold in the whipped cream then pour the mixture into the mold and place into the fridge to set
- When set you can garnish with the relevant thin fruit slices and then top with the jelly mirror
