The ingredients needed to prepare Pancake:
- Get 2 egg yolks
- Provide 30 gms Condensed milk
- Use 80 ml milk
- Provide 10 gms vegetable oil
- Use 1/2 tsp vanilla essence/extract
- Prepare 70 gms maida/ all-purpose flour
- You need 20 gms cornflour
- Prepare 1/2 tsp baking powder
- Take 1/4-1/2 tsp Vegetable oil
- Use For meringue
- You need 2 egg whites
- Provide 15 gms powdered sugar
- Prepare Garnishing/ topping / accompaniments
- You need Aa needed Whipped cream
- Provide As needed Honey
- You need As needed Fruits
- Use as needed Condensed milk
Instructions to make Pancake:
- In a clean (non greasy) take the egg whites and with an electric hand blender or hand whisk start beating the egg whites till it becomes frothy,after this add the sugar and whip until the meringue (egg whites) reaches stiff pick.
- Shift the dried ingredients together - flour, cornflour, baking powder. In another bowl whisk the egg yolk, condensed milk,oil and vanilla. Now add the dried ingredients to the liquid mixture in two or three parts, make sure there are no lumps in the batter.
- Now fold in the meringue in the above prepared batter in two or three parts with light hand, make sure it forms a homogeneous smooth batter but don't let all the air of the meringue out.Once the smooth batter is formed, cover and keep in the fridge for 10-15 minutes.
- Now lightly heat a non-stick pan (non-stick pan is a must), do not over heat the pan, it should just start hesting, keep the flame at low only. Now put little veg oil in the kitchen tissue paper /muslin/ cotton cloth(oil should be for namesake only)
- Just wipe the pan with the oiled tissue paper and pour the batter in the size you want+ no need to spread with spatula or anything, the batter will spread and take its own round shape). Now cover the pan with a lid and cook for 30 seconds to less than a minute, the pancake will turn 99% solid by this time, if not wait for few seconds and then flip it, you will see the pancake (with the side down) has got a nice golden brown hue.
- Cook the other side also covered for 30 seconds to a minute and your Pancake is done. (If you want you can again flip it and let the golden brown side cook for another 30 secs or so till you get the desired color but be careful don't burn it.)
- Make the rest of the pancakes too. Serve pancakes with whipped cream, honey, condensed milk, maple syrup, fresh fruits etc. or you can have it just like this. (This pancake is very lightly sweetened one). Bon Appetit!!!!
