- Get 3-4 cup vegetable stock
- Take 2 green chillies chopped
- Take 1 tsp ginger grated (thai ginger)
- You need 1 tsp lemon grass chopped (optional)
- Provide 1 cup tofu cut into square piece
- Get 2 tbsp spring onion chopped
- Prepare 1 tsp soya sauce
- You need 1 cup sliced mushrooms

- You need 1/2 tsp lemon juice
- You need 1 tbsp garlic finely chopped
- You need 3 tbsp mix vegetable (carrot, beans cauliflower)
- Prepare 1 tbsp coriander leaves chopped

Steps to make Healthy Soup:
- In big pan boiled vegetable stock add butter, mushrooms, garlic, ginger, vegetable, lemon grass, green chilli and tofu/paneer.
- Simmer till the vegetables are tender for five minutes.
- Add soya sauce, spring onion, black pepper powder and salt.
- Boil for a few more minutes. Adjust seasoning.
- Transfer in soup bowl and add lemon juice.
- Garnish with coriander leaves and serve hot.
