  1. Get 2 Lemons
  2. Prepare 1 tbsp Olive oil
  3. Provide 1 Red onion cut into thick slices
  4. Provide 1 cup Pitted Kalamata olives

  6. Take 1 dash Salt and pepper
  7. Get 1 tsp Greek seasoning

  11. Use 1 pints Cherry tomatoes
  12. Provide 1 tsp Balsamic vinegar

  1. Preheat oven to 450°F Zest one lemon. Place zest in bowl and add olive oil, onions and olives. Toss to coat and place at bottom of baking dish.

Serve on bed of spinach or as a pita sandwich. Optional additions: top with Feta , tatsiki sauce, roasted red peppers, pepperoncinis, hummus or cucumbers!!
