- You need onion chopped
- You need garlic minced
- Get celery chopped
- Prepare carrots oblique cut
- Provide tblsp thyme
- You need bay leaves
- You need tblsp tomato paste

- Prepare beef (brisket and short rib) cut

- On medium heat, fry onions, celery and garlic for 2 minutes. Add carrots and fry for a further 2 minutes. Add thyme and bay leaves and stir.
